House of Taipei

Chinese restaurants aren’t that special, right?  Just fast food, or even a buffet to be scarfed down in less than an hour at lunch?  Not so at the House of Taipei in Huntersville.  When you enter you can see the difference in the table linens.  The restraurant is filled with rich dark woods and the table linens are white cotton (even the napkins!).

We started off with Hot and Sour Soup, which had a thick, rich broth and was chock full of mushrooms and tofu.  We’ve also had their egg rolls which are crispy and delicious.  For our entrees on this night we shared, of course.  My husband got Moo Shu Pork, which is a little like a Chinese pancake.  It is a thin tortilla spread with Hoisin sauce and topped with a stir-fried picture of pork, bamboo shoots, mushrooms and cabbage. That is my favorite!  I ordered the Shrimp in Firecracker sauce, which is described a spicy Chinese marinara sauce.  It is fantastic!  See the picture above for these entrees.

We always order too much so we never have room for dessert, but we always get the fortune cookies for the ride home.

There is a new park at Lake Norman!  It’s Grand Opening is May 9, but you can go today!

This is a 22 acre waterfront park called Beatty’s Ford Park.  It’s right off of Unity Church Rd.

My family took my husband here for his birthday this week and this was our first visit! I can’t believe we’ve never been before! It was just awesome. There is so much to do for outdoor lovers!

Being a Wednesday in February the rapids were not “turned on” so I didn’t get to experience that firsthand. In fact, it was quite dead there on Wednesday, and we were informed that we shoud return on the weekends, when they have many kid and family-friendly activities.

From their website: Located on the banks of the Catawba River in Charlotte, N.C., the U.S. National Whitewater Center is the world’s largest artificial whitewater river and an official U.S. Olympic Training Site. The USNWC is a locally owned and operated non-profit dedicated to promoting healthy, active, outdoor lifestyles. Opened in August 2006 at a cost of $38 million, the 307-acre public adventure-sport facility includes whitewater rafting and kayaking, mountain biking and hiking trails, a climbing center and a ropes course, along with a 2,400 square-foot conference center and 300-seat River’s Edge Bar & Grill – all overlooking the home rapids of the U.S. National Slalom Canoe/Kayak Team.

The amazing thing is that it is located only minutes away from uptown Charlotte! Acres of hiking trails, white water rafting and kyaking, climbing walls and ziplines, eco caching, mountain biking, jogging and even eating at a great little restaurant on the banks of the white waters!

The day we were there, it was too cold to do anything but hike. There are several letterboxes hidden within the park, so if you are into that you can have a search while you hike.

REALTOR Luncheon a success!

7209 Sedgebrook West

I had a REALTOR Luncheon at my listing on 7209 Sedgebrook Drive West in Stanley.  This home is located in the Gates at Waterside Crossing.  To lure the REALTORs out away from the warm dry offices, you have to promise to have good food.  I try to make homemade stuff instead of getting mine catered because people will actually come for that reason!  This time I made a host of gourmet sandwiches: tuna salad, pimiento cheese, turkey and ham.  I served the sandwiches with chips and soda.  I also had three simple desserts that I made:  Brownies, Cupcakes with homemade chocolate frosting and Hello Dollies.  The recipes I used are below:

These are rich, yummy layered squares that require no bowl or mixing. They are very easy to make and come out wonderful. (I have no idea where the name came from…got these out of a 30 year old women’s club cookbook.) 12/23/08: Butter amount changed to reflect the advice and opinions in reviews. Thanks!

SERVES 16

  • 4-6 tablespoons butter, melted (many reviewers prefer the higher amount)
  • 1 cup graham cracker crumbs
  • 1 cup chopped walnuts or nuts, of choice
  • 1 cup semi-sweet chocolate chips
  • 1 cup flaked coconut
  • 1 (14 ounce) can sweetened condensed milk
  1. Preheat oven to 325 degrees Fahrenheit.
  2. Spread melted butter in a 9 x 13 pan.
  3. Sprinkle with graham crumbs.
  4. Add the nuts, chips and coconut, sprinkling evenly over crumbs.
  5. Cover all with condensed milk.
  6. Bake for 25 minutes.
  7. Allow to cool and cut into squares.

Drew’s Homemade Pimiento Cheese

You’ll never buy pimiento cheese again! If you want a milder version, omit the cayenne pepper. Everyone asks for this very easy recipe. Try this in a grilled cheese sandwich! YUM.

SERVES 6 , 1 1/2 cups cheese spread

  • 2 cups grated sharp cheddar cheese (8 ounces)
  • 1/4-1/2 cup mayonnaise (I use 1/4 cup)
  • 1 (4 ounce) jar chopped pimiento, drained
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon red wine vinegar or distilled vinegar
  1. Chop pimientos into small pieces, or pulse in a food processor.
  2. In small bowl, stir all ingredients until well mixed.
  3. OR put all ingredients into a food processor, and pulse until well-blended and pimientos are in small pieces.
  4. Serve on crackers, with celery, or make pimiento cheese sandwiches!
  5. NOTE: Using 1/4 cup mayonnaise makes a rather stiff spread which we like.
  6. You may prefer to add up to 1/2 cup mayonnaise to get the spreading consistency you like.

  • 6 tablespoons butter, softened
  • 2 2/3 cups confectioners’ sugar
  • 1/2 cup cocoa
  • 1/3 cup milk
  • 1 1/2 teaspoons vanilla
  1. Place butter in a bowl and beat until creamy.
  2. Add sugar and cocoa, mixing well.
  3. Stir in milk in portions, stirring each time.
  4. Add vanilla.
  5. Spread on cooled cake or other items needing frosting.

Tuna & Egg Salad

I made this with a few tweeks.  First, I doubled the tuna, then I only used 2 hard boiled eggs.  I wanted it to be more tuna salad than egg salad.  Also, I used 1 large can albacore tuna and 1 envelope of hickory smoked tuna.

SERVES 4 -6

  • 2 (6 ounce) cans tuna
  • 6 hard-boiled eggs
  • 1/4 cup pickle relish (dill or sweet)
  • 3/4 cup mayonnaise
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dill weed
  1. Mash eggs with a potato masher or large fork.
  2. Combine all ingredients in a medium bowl, mix thoroughly.
  3. Chill.
  4. Goes well with crackers or as a sandwich spread!

Budget Tips: Cut Your Grocery Bill

I don’t know about you, but my budget has whittled away in this economy.  Gone are the days of free spending (as if we ever had those!) so here are some tips I’ve found to help cut your grocery bill.  For some reason, though gas has gone down, food prices have gone through the roof!  Use these tips to whittle your food bill:

Time Savers do not equal Cash Savers

  • You know those salad bags full of washed greens ready to eat?  They are about 3 times as pricey as a head of lettuce. 
  • Single servings of anything.  Time to buy the big box of raisins and dole out individual portions.
  • Trail mix is outrageously expensive, sometimes as much as $10 a pound.  Plus you have to pick out the junk you don’t eat!  Buy your favorite goodies and mix it yourself.
  • Powdered ice tea mixes:  Grab some teabags and make it yourself.
  • Bottled Water:  We all know that tap water is just as good, and you eliminate waste in our landfills and in your wallet.
  • Boxed rice, potato or pasta side dishes.  Buy your own staples, add your own herbs.  Better tasting and better for you too!
  • Tomato based pasta sauces:  I’ve seen some pasta sauces for over $5 a quart jar!  Have you seen the cost of a can of tomatoes?  And you probably have some spices at home that you need to use up before they go stale anyway!

Use Everything!

  • Vegetable trimmings and bones can be used to make delicious stocks.
  • Use leftovers to make pot pies, homemade hot pockets and casseroles.

Common Sense

  • Buy in bulk
  • Use your deep freezer to take advantage of meat sales.

Get a new attitude!

Want to begin to change your attitude?  It will miraculously affect your success (and income).  Live these thoughts and exercises:

·        When something goes wrong, remember it’s no one’s fault but yours.

·        You always have (and have had) a choice.

·        If you think it’s okay, it is.  If you think it’s not okay, it’s not.

·        Ignore the junk news.  Work on a worthwhile project, make a plan, or do something to enhance your life.

·        For one year, read only positive books and material.

·        When you face an obstacle or something goes wrong, look for the opportunity.

·        Ignore people who tell you that “You can’t” or try to discourage you.

Christmas gifts to make

My children are constantly bringing home artwork from school and insist I display it prominently on the ‘fridge.  For the mom who has everything, you can make an Artwork Holder Magnet.

Sometimes the old toys are the best 🙂  Learn how to make a stuffed elephant using a red-heeled sock!

Easy Christmas Baking

Christmas Cookies!  I love them!  Here are some recipes from some of my favorites I’ve tried and a few from around the ‘net I need to.

Kentucky Sugar Cookies

Kentucky Sugar Cookies

makes 9 dozen!

Ingredients

  • 1 cup butter, softened
  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup powdered sugar, sifted
  • 2 large eggs
  • 1 teaspoon vanilla
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Directions

  • 1In a large mixing bowl, combine the dry ingredients; flour, baking soda, salt and cream of tartar; set aside.
  • 2In another large mixing bowl, beat the butter and oil. Gradually add in both the sugars until thoroughly combined.
  • 3Add the eggs, one at a time, beating well after each addition. Add the vanilla.
  • 4Add gradually to creamed mixture, beating well after each addition. Preheat oven to 350 degrees.
  • 5Drop dough by teaspoonfuls onto ungreased cookie sheet; bake for 12-14 minutes. Remove from pan onto cooling rack

 

Snickerdoodle Cookies

I had a box of Cinnamon Muffin Melt Mix from Tastefully Simple in the cupboard and whipped up a batch of these super simple cookies in minutes!

ingredients

  • Cinnamon Muffin Melt Mix from Tastefully Simple
  • 6 tablespoons butter, melted
  • 1 large egg

directions

  1. Preheat oven to 350°F. In large bowl, combine Cinnamon Muffin Melt Mix packet 1, melted butter and egg. Blend until dough forms. Shape into 1-inch balls.
  2. Pour Cinnamon Muffin Melt Mix packet 2 into a shallow dish. Roll dough balls in cinnamon-sugar coating.
  3. Place on a greased baking sheet. Bake 11-12 minutes.

Makes about 30 cookies.

Sparkly Brownie Coins

Ingredients

  • 1 cup sugar
  • 4 tablespoons unsalted butter, at room temperature
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup flour
  • Edible gold dust

Preparation

Using an electric mixer, cream the sugar, butter and salt at high speed until well blended, about 3 minutes. Scrape down the bowl, add the egg and vanilla and beat for 1 minute.

Beat in the cocoa at medium speed until thoroughly blended. Add the flour and mix at low speed just until incorporated.

Preheat the oven to 350 degrees . Line 2 cookie sheets with parchment.

Scoop out 1 tbsp. of dough, roll into a ball and place on a prepared pan. Repeat with the remaining dough, spacing evenly on the pans.

Using the bottom of a drinking glass, flatten each ball into a 1/4-inch-thick round. Peel the dough off the glass; return to the pan. Dip a small paintbrush into the edible gold dust; flick onto the cookies.

Bake 1 pan at a time (refrigerate the other pan) until the cookies are set at the edges, 10 to 11 minutes. Let cool on the pan for 2 minutes; transfer to racks to cool completely.

Fun Food For Kids

Getting my kids to eat what I cook is sometimes a chore I hate to undertake.  Here are a few ways to let kids have a little fun with their food, and maybe…just maybe get them to eat a bite or two!

Cheesy Volcano Meatballs are perfect for those little boys who crave explosions.

Earthquake Cakes are pretty much any cake that doesn’t turn out like you thought it would.  The typical ones are sheet cakes with cracks through the middle.

Baked Snowballs are a perfect winter treat!

Penguin Drive-In

The Penguin is an institution on Charlotte.  My sister lives just around the corner, so when she asked me to go one evening (after I’d driven over from Lincolnton) I thought she’d gone around the bend.  But it was artery-clogging goodness that awaited me and mine!

First, we began with a big basket of fried pickle chips served with a homemade Ranch dressing.  OMG.  It’s not that I’ve never seen or had fried pickles, but most places fry the entire spear.  No.  Not enough crunchy goodness.  Frying the chips is the way to go.

And the coup de gras:  a double cheeseburger.  Dear heavens.  I can feel my heart stopping.
